Recipe and Sale Finds!

Happy Saturday!  My favorite day of the week!

I probably wouldn't have thrown this post together until next week- but I've had several comments/text wanting the chicken enchilada ring recipe- which tickles me!  I love sharing recipes! Thank you all for asking :)

So here ya go:

Chicken Enchilada Ring

Ingredients:

2 cups cooked chicken
1/4 cup chopped block olives (not at my house, we leave this out!)
1 cup cheddar cheese
1 small can chopped chilies, undrained
1/2 cup sour cream
1 package taco seasoning
2 rolls of crescent rolls
1 small chopped tomato
1 lime (juice)
2/3 cup finely crushed tortilla chips (if you desire!)

1. Chop (or shred- we like shredded) the chicken and add olives, cheese, chilies, sour cream and taco mix. Seed and chop 1 tomato and add 2 tablespoons lime juice; add to chicken mixture. Reserve 2 Tblsp. crushed chips and add remaining chips to mixture (Depending on time- I sometimes leave out the crushed chips.  It takes extra time to crush and add them, and I can't tell much of a difference with/without them.)

2.Unroll crescent dough and separate triangles. Arrange on lightly sprayed cookie sheet making a circle with wide ends OVERLAPPING in the center and points toward outside. There should be approximately a 5 inch diameter opening in the center, but don't get too caught up on this.



3. Spread chicken mixture evenly onto widest end of each triangle.




4. Bring points of triangles up and over filling and tuck under wide ends of dough at the center of the ring.




My "tucks" are usually a little tighter/neater- but this was Abby's ring :)


5. Sprinkle with 2 Tblsp. crushed chips (if you feel like messing with it) and sprinkle with cheese!

6. Bake @ 375 for 20-25 minutes. Garnish with tomato and serve with salsa and sour cream.





That's it!  It really is very simple and a great "throw together work-night" meal!



Thought I'd share a picture of my Thursday lunch date.  



My father-in-law had his leg amputated a few months ago, and is doing very well considering.  This was the first time that I tackled picking him up (dealing with wheelchair) by myself.  When we arrived at the restaurant, I lugged the chair out of the trunk, and had it ready to go for him.  The wheelchair is quite cumbersome, and I was proud of myself for being able to do it alone.  I opened his door and asked if he was ready for the trasnfer.  When I turned around to scoot the chair up a little closer- it was rolling across the parking lot.  I forgot to lock it in place.

I won't be working for Tarc3 anytime soon.


And because I can't seem to keep any post short and sweet....  here are a couple of summer clearance finds I thought I'd share!

I've been watching my favorite websites, waiting for summer clearance.  Sailboats, anchors and everything nautical were hot this year, and now they are discounting it all! 
 
All summer, J Crew wanted an obscene amount for this precious anchor blouse, and I just couldn't do it.  

 

 
They finally marked it down 75% off and I missed out on it.  Sold out. :(  I should have jumped when I had the chance. 

 
Okay, so that was a tease, but this is not!  Old Navy was my favorite store in college, but over the years I stopped having any luck there.  I guess I out-grew their carefree style.  However, I returned this season when they released these cute summer/nautical shorts!  They are also available in green and fit true to size.  They are clearanced now, just $17.99!

They also come in a polka dot nutmeg (below), which I think could even be cute carried into the fall (on the warmer days) with a long sleeved white or navy top.

How cute would this sailboat blouse be with a little pair of white shorts?  Perfect for a casual dinner during next year's summer vacation.  Again- Old Navy, and $14.99 (clearance).  They did good this year!
 



Summer clearance for the home....  I LOVE these!!
 
 
Architectural Pillar Holders from Pottery Barn.  They were $49.00 when I looked at them several months ago, and now they are $29.99.  I want them....  but don't really have a place for them.  Somebody else buy them please, so that I don't have to.  Mom- maybe a couple on your bookshelves??  :)

And this isn't a summer clearance find, but thought I'd share.  I went to Sam's Club for a paper towel, bathroom tissue, all things Swiffer, kind of trip.   As Troy carried it all in from the car, I told him to be careful with my new candy bowl...   he raised an eyebrow and I quickly explained that it was a "free with purchase promotion".....   buy a Charmin Bathroom Tissue, get a handpainted Halloween Candy Bowl for free!  ;-) 
 
 
 He said it's awfully funny how they never have these promotions on days he is shopping with me ;)
 
Candy bowl (two different styles and it's larger around than what it appears in photo) $19.99 at Sam's Club.  They will go fast- as all Sam's holiday decor does!

    Yes, I "LOVE" the Pillar Holders from Pottery Barn. Can you pick them up for me and tell dad about the gifts you receive when buying Bathroom Tissue? LOL I am a big fan of Nautica. I also like Old Navy's summer print of anchors and sailboats but those navy/white, horizontal striped shorts ??? Not on my hips ! What were they thinking?
