Recipe and Sale Finds!

Happy Saturday!  My favorite day of the week!

I probably wouldn't have thrown this post together until next week- but I've had several comments/text wanting the chicken enchilada ring recipe- which tickles me!  I love sharing recipes! Thank you all for asking :)

So here ya go:

Chicken Enchilada Ring

Ingredients:

2 cups cooked chicken
1/4 cup chopped block olives (not at my house, we leave this out!)
1 cup cheddar cheese
1 small can chopped chilies, undrained
1/2 cup sour cream
1 package taco seasoning
2 rolls of crescent rolls
1 small chopped tomato
1 lime (juice)
2/3 cup finely crushed tortilla chips (if you desire!)

1. Chop (or shred- we like shredded) the chicken and add olives, cheese, chilies, sour cream and taco mix. Seed and chop 1 tomato and add 2 tablespoons lime juice; add to chicken mixture. Reserve 2 Tblsp. crushed chips and add remaining chips to mixture (Depending on time- I sometimes leave out the crushed chips.  It takes extra time to crush and add them, and I can't tell much of a difference with/without them.)

2.Unroll crescent dough and separate triangles. Arrange on lightly sprayed cookie sheet making a circle with wide ends OVERLAPPING in the center and points toward outside. There should be approximately a 5 inch diameter opening in the center, but don't get too caught up on this.



3. Spread chicken mixture evenly onto widest end of each triangle.




4. Bring points of triangles up and over filling and tuck under wide ends of dough at the center of the ring.




My "tucks" are usually a little tighter/neater- but this was Abby's ring :)


5. Sprinkle with 2 Tblsp. crushed chips (if you feel like messing with it) and sprinkle with cheese!

6. Bake @ 375 for 20-25 minutes. Garnish with tomato and serve with salsa and sour cream.





That's it!  It really is very simple and a great "throw together work-night" meal!



Thought I'd share a picture of my Thursday lunch date.  



My father-in-law had his leg amputated a few months ago, and is doing very well considering.  This was the first time that I tackled picking him up (dealing with wheelchair) by myself.  When we arrived at the restaurant, I lugged the chair out of the trunk, and had it ready to go for him.  The wheelchair is quite cumbersome, and I was proud of myself for being able to do it alone.  I opened his door and asked if he was ready for the trasnfer.  When I turned around to scoot the chair up a little closer- it was rolling across the parking lot.  I forgot to lock it in place.

I won't be working for Tarc3 anytime soon.


And because I can't seem to keep any post short and sweet....  here are a couple of summer clearance finds I thought I'd share!

I've been watching my favorite websites, waiting for summer clearance.  Sailboats, anchors and everything nautical were hot this year, and now they are discounting it all! 
 
All summer, J Crew wanted an obscene amount for this precious anchor blouse, and I just couldn't do it.  

 

 
They finally marked it down 75% off and I missed out on it.  Sold out. :(  I should have jumped when I had the chance. 

 
Okay, so that was a tease, but this is not!  Old Navy was my favorite store in college, but over the years I stopped having any luck there.  I guess I out-grew their carefree style.  However, I returned this season when they released these cute summer/nautical shorts!  They are also available in green and fit true to size.  They are clearanced now, just $17.99!

They also come in a polka dot nutmeg (below), which I think could even be cute carried into the fall (on the warmer days) with a long sleeved white or navy top.

How cute would this sailboat blouse be with a little pair of white shorts?  Perfect for a casual dinner during next year's summer vacation.  Again- Old Navy, and $14.99 (clearance).  They did good this year!

Architectural Pillar Holders from Pottery Barn.  They were $49.00 when I looked at them several months ago, and now they are $29.99.  I want them....  but don't really have a place for them.  Somebody else buy them please, so that I don't have to.  Mom- maybe a couple on your bookshelves??  :)

And this isn't a summer clearance find, but thought I'd share.  I went to Sam's Club for a paper towel, bathroom tissue, all things Swiffer, kind of trip.   As Troy carried it all in from the car, I told him to be careful with my new candy bowl...   he raised an eyebrow and I quickly explained that it was a "free with purchase promotion".....   buy a Charmin Bathroom Tissue, get a handpainted Halloween Candy Bowl for free!  ;-) 
 
 
 He said it's awfully funny how they never have these promotions on days he is shopping with me ;)

Blog Request!

Troy just asked me what I was doing.  I told him that I had to blog..... I had two.......TWO.... request for a new post.  I feel important.

"That's neat, " he said...   "from who?"

Ummmm.....  Mom and Christy (sister-in-law).   :)

If it weren't for Christy occasionally texting me a blog request- I guess I'd never post!  Thank you Christy!

I've waited too long to blog, and therefore I have a mess here.  This post is a hodge-podge of random stuff, and it jumps around everywhere.  If you make it to the end....  you may have borderline ADD :)


We'll start with Jen's baby shower.....


We are down to weeks until we welcome this sweet baby girl (with no name yet....which is driving me crazy!!!).  Her due date is October 10th, but I REALLY need the baby to arrive on September 29th.  Well...  not really...  I just have nothing going on that weekend and would really like for the baby to come then. :)  HA!  I've told Jen that I need her water to break, or for the doctor to tell her that she's going to be induced on that Friday afternoon, about the time that I get off. :)  I don't think it's too much to ask.




I've blogged before about Jen and her best friend Lauren, expecting at the same time!  I think that's so neat.  I wanted them to have a shower together, but they are giving one another a shower, so it wouldn't work.  Aren't they sweet?  I've said it before, but I will need a BFF to be pregnant with, if anyone would like to be on stand-by when I'm ready. :)









Here you go Megan!


Megan specifically asked if I would take a picture of her and put it on the blog.  She is hysterical.  Megan is a good friend of Jen's and Nate thinks she hung the moon.

Speaking of Nate.....he was so sweet at the shower.  He looked, felt and paid attention to each and every gift.

He is such a good boy...


Thank you Jen for having both my Momma and I to your shower!  We can't wait to meet baby girl on the weekend of September 29th.  HA! :)


Our sweet Abigail spent the night with us last week.  We enjoyed her!  When I pulled up to her house to pick her up, she came running down the driveway toward me with her arms in the air.  When I got home with her, and Troy came out to meet us, she ran to him and did the same.  It melted my heart.

She helped me make dinner that evening.






Have you ever made a chicken enchilada ring?  It's so easy and very yummy.  A quick dinner to throw together on work nights.  It's basically chicken, taco seasoning, and a few other mexican style ingredients placed inside crescent rolls, folded over to form a ring.



You can fancy it up by transferring it to a pretty platter and garnishing with lettuce and a pretty bowl of salsa in the middle.

Or you can just serve it straight off the baking sheet like we do on a work night :)


I will have to post the recipe if anyone is interested.






After dinner and a bath, we laid in bed and watched Barney.  The episode had something to do with elephants.  At one point, Troy looked up at the tv and said, "this show is completely inaccurate..... dinosaurs and elephants were not of the same time era....if anything they should have used a woolly mammoth, but even that would have been millions of years from the dinosaur era."

????

Here is Abby standing in the same spot, doing the same thing, exactly one year ago.  What a difference one year makes!


We met Jennifer and the boys at the zoo.  This was their very last day of summer break :(











After the zoo, we went swimming.....

She loved the pool and did NOT want to leave.  She wanted SO bad to throw a fit (I could tell she was contemplating it) but never did.  Always such a good girl for Aunt Kristin!  I did get a few dirty looks though. :)

Here are a few shots from our boring weekend. 


Troy was on call, which means we can't plan much. We spent the weekend working on a few small house projects, made a couple of trips to Home Depot and prayed that his pager wouldn't go off.


I tease Troy because every time we go into Home Depot, he finds an excuse to get a new pair of work gloves.  ???  It's so strange to me.  He did it again this weekend....


and we now have a pair of "Gorilla Grip" gloves to add to his collection.  He says you never know when you'll need a good pair of work gloves. ???

Troy installed a couple of more landscaping lights for us on Saturday evening.  This cat showed up while he was working.  Troy loves cats, and they scare me to death.  If he wasn't allergic (thank you Jesus!!!), I'm afraid we'd be featured on an episode of Cat Hoarders.  He is obsessed.  He had whelps on his hands from messing with this cat, and was bummed when it finally ran off.

Before closing, I have to say how much I've LOVED seeing all of the first day back to school pictures through text and Facebook!  From preschool, all the way through Senior year- I've enjoyed them all so much!

Here are a few of my favorites.....


Sweet Olivia in her new 3 year old room.  I could just eat her up.  If I was her teacher, I would just hold her all day :)

 Nate's first day of Kindergarten.  His momma put him on the school bus this morning for the first time....   and then followed it's route all the way to school to make sure he got there okay.  Love it!  I then met her for breakfast so that she wouldn't cry all morning :)

Max & Will.  I'm not used to seeing little Max in a uniform and I told Jennifer that they looked like two rich kids heading off to boarding school.  Also- Jennifer passed her boards today!!  Good week for the Rowe household.


Cooper & Cameron....  twin brothers who were possibly going to be separated for the first time this year!  They were given separate teachers!  Ann was traumatized....   the boys appear to be fine :)



 Beautiful Jenna (I thought you would enjoy this Norma- do you remember Jenna and Erica?).  I can't tell you how many hours I babysat for Jenna as a TODDLER!?  And now she's a freshman.  Where does time go?

Lorielle on her first day as a Senior, with her car :).  I hope senior year is good to her!  If only every beautiful, high school girl was as sweet as she is!
